What can we say about Cabernet Sauvignon?
So much has been written about this spectacular red wine, with its richness and consistency and of course, classic aromas. This complex wine, is elegant, but firm, of full body, yet smooth, notably known from the Bordeaux region, is unquestionably in a class of its own. The Medoc district in France is by far the trademark for this varietal of deep skin and firmness.
Known for its plum, black current, black cherry flavors, by nature its rich dark ruby color has frequently used to blend with the other grapes region due to its dependability . According to U.C. Davis it has been determined that “the Cabernet Sauvignon is actually the hybrid offspring of the Sauvignon Blanc and Cabernet Franc”
This grape will flourish in moderately warm, well drained soils, that will tend to give it its depth, , marked by its rich concentration of aromas: ginger, red pepper, asparagus, green peppercorns . Although not a friend to cold climates, it is fairly resistant to disease and will tend to ripen late in the season.
Without question, this premier red wine grape, aged in oak barrels for 18 months, is distinctive, complex, and unlike any other.
CABERNET SAUVIGNON BARON PHILIPPE DE ROTHSCHILD 2002
The wine has a dark colour, deep and brilliant with a cherry tint.
The refined nose opens on berry fruit aromas (blackberry and bilberry) which mingle on airing with more complex notes of liquorice, caramel and spice.
The attack is dense and well-constructed with forward tannins that are already beginning to round out, developing a solid structure on the palate with plenty of body and heft.
The long and very expressive finish is dominated by a fine balance between juicy berry fruit and substance, typical of ripe Cabernet Sauvignon.
